Lemon Rice


Ingredients:
1.     Rice- 250 gm
2.     Oil- 50 gm
3.     Salt- 1 tsp
4.     Green chilies- 8
5.     Garlic ginger paste- ½ tsp
6.     Turmeric powder- ¼ tsp
7.     Coriander- 1 cup
8.     Mint- 1 cup
9.     Curry leaves- ½ cup
10. Lemon- 1
11.  Cashew nuts - 1 cup   or  moongphali
12. Mustard seeds- 1 tsp

Method:
  • Cook rice and keep aside.
  • Keep a pan on stove and pour oil.
  • Fry mustard seeds, green chilies, and curry leaves.
  • Then add cashew nuts and fry till it slightly turns golden
  • Now add garlic ginger paste and fry.
  • Now fry turmeric powder, salt.
  • Then add coriander and mint and fry.
  • To this add the cooked rice, lemon juice and mix well.
  • Put off the flame.
  • Lemon rice is ready, serve hot.
