INGREDIENTS:

Brinjal- 250 gm

Potato – 250 gm

Tomato-2

Methi leaves- 1 cup
5.
Coriander- 1 cup

Oil- 100 gm

Onion- 1
8.
Green chilies- 6
9.
Red chili powder- ½ tsp
10.
Salt- 1 tsp
11.
Garlic ginger paste- 1 tsp
12.
Turmeric powder- ¼ tsp
METHOD
- Cut brinjal and potato into pieces and put in salt water.
- Now cut tomato into pieces.
- Keep vessel on stove and pour oil.
- Now fry onion and green chilies till onion turns soft.
- Now add turmeric powder, salt, red chili powder and garlic ginger paste and mix well.
- Now add brinjal and potato and fry till brinjal becomes soft.
- Now add tomato, water, methi and cook till potato becomes tender.
- Now add coriander and stir till water dries.
- Brinjal curry is ready.
Brinjal Curry is one of the Major dish for Telugu people. They love to keep it on their lunch menu. They usually like to make it on once in a week.
