Brinjal Curry


INGREDIENTS:
1.     Brinjal- 250 gm
2.     Potato – 250 gm
3.     Tomato-2
4.     Methi leaves- 1 cup
5.     Coriander- 1 cup
6.     Oil- 100 gm
7.     Onion- 1
8.     Green chilies- 6
9.     Red chili powder- ½ tsp
10.   Salt- 1 tsp
11.   Garlic ginger paste- 1 tsp
12.   Turmeric powder- ¼ tsp

METHOD
  • Cut brinjal and potato into pieces and put in salt water.
  • Now cut tomato into pieces.
  • Keep vessel on stove and pour oil.
  • Now fry onion and green chilies till onion turns soft.
  • Now add turmeric powder, salt, red chili powder and garlic ginger paste and mix well.
  •  Now add brinjal and potato and fry till brinjal becomes soft.
  • Now add tomato, water, methi and cook till potato becomes tender.
  • Now add coriander and stir till water dries.
  • Brinjal curry is ready.


Baigan With Mutton

                
Ingredients:
1.     Brinjal- 500 gm
2.     Potato- 250 gm
3.     Mutton- 250 gm
4.     Methi leaves- 1 cup
5.     Coriander- 1 cup
6.     Salt- 1 tsp
7.     Red chili powder- ½ tsp
8.     Turmeric powder- ¼ tsp
9.     Garlic ginger paste- 1 ½ tsp
10.                        Green chilies- 6
11.                        Onion- 1
12.                        Oil- 100 gm

Method:
  • Take water in a vessel and add 1 tsp salt and pieces of brinjal and potato.
  • Take oil in a vessel and fry slices of onion and green chilies till onion turns soft.
  • Now add mutton and add salt (1/2 tsp), red chili powder, turmeric powder, garlic ginger paste and stir till water of mutton dries.
  • Now add water and cook till mutton becomes half tender.
  • On removing lid see if water is present or not.
  • If water is not present add brinjal, potato and salt(1/2 tsp).
  • If water is present see to it that it is dried, then add brinjal , potato and salt.
  • Now fry this till brinjal becomes soft.
  • Now add water and methi leaves and cook till potato becomes tender.
  • Now add coriander and stir till water dries.
  • Brinjal  with mutton is ready.

Mutton Katli


                              

Ingredients:
1.     Mutton- 250 gm
2.     Daal tuvar- 100 gm
3.     Kulfa- 10- 15
4.     Tomato- 4
5.     Lemon- 1 (or tamarind paste- 50 gm or raw mango- 1)
6.     Onion- 1
7.     Green chili – 15
8.     Red chili powder- ½  tsp
9.     Turmeric powder- ¼ tsp
10.   Garlic ginger paste- 2 tsp
11.  Salt- 1 tsp
12.  Coriander- 2
13.   Oil- 100 gm

Method:
  • In a vessel wash daal and add 400 ml water and keep on stove.
  • After daal becomes half tender add kulfa to it and cook until daal becomes completely tender. (if you want to add tamarind paste or raw mango add it with kulfa ).
  • Put off the stove and add ½ tsp salt and mash. Keep it aside.
  • Take a vessel, pour oil in it and keep on stove.
  • Fry slices of onion and green chilies till onion turns soft.
  • Now add mutton, salt (1/2 tsp), red chili powder, turmeric powder, garlic ginger paste and fry till water of mutton dries.
  • Now add tomato and water and cook till mutton becomes tender.
  • Now still till tomato dissolves.
  • Now add the kulfa which was kept aside.
  • Now add lemon and coriander. Boil this for 5 mins.
  • Leave on low flame for 10 mins and put off the stove.
  • Mutton katli is ready.
