Veg Biryani


                                                
Ingredients:
1.     Basmati rice (or) Rice- 1 kg
2.     Potato- 250gm
3.     Peas- 250 gm
4.     Carrot- 250 gm
5.     Green beans- 250 gm
6.     Tomato- 200 gm
7.     Cream- 250 ml
8.     Lemon - ½
9.     Shazira- elaichi powder- 2 tsp
10.                        Bay leaves-5
11.                        Coriander- 2 bunch
12.                        Mint- 1 bunch
13.                        Onion-1
14.                        Green chilies- 10
15.                        Salt- 2 tsp (for aqni)
16.                        Salt- 2 tsp (for rice)
17.                        Garlic ginger paste- 2 tsp
18.                        Red chili powder- 1 tsp
19.                        Turmeric powder- ½ tsp
20.                        Oil- 100 gm
Method:
  • Wash rice in the vessel in which you are planning to cook. Then add water, salt (2 tsp) and keep aside.
  • Now wash all vegetables and cut into small pieces. Keep all the vegetables separately.
  • Keep a vessel on stove, pour oil and fry onion and green chilies till onion turns golden brown. Take it out from oil, mash it and keep aside.
  • In the same oil, fry carrot by adding 1/4 tsp salt, take it out of oil and keep in a plate. Then fry green beans by adding 1/4 tsp salt, then fry peas by adding 1/4 tsp salt, then potato by adding 1/4 tsp salt one by one and keep in same vessel.
  • To the same oil add bay leaves, garlic ginger paste and fry for 2 min. Then add turmeric powder, salt (1 tsp), red chili powder and coriander and fry.
  • Now add tomato, all the fried vegetables, peas and the fried onion and green chilies to this.
  • Now add cream,  lemon juice and shazira- elaichi powder.
  • Add 200ml water to this and mix well. Keep it on lowest flame till water dries. This is aqni, keep it aside.
  • Keep the vessel of rice on stove till rice is half cooked. Then drain water, but see to it that some water remains.
  • Now make layers of rice and aqni such that 3 layers of rice and 2 layers of aqni are formed. Like spread layer of rice and then a layer of aqni then a layer of rice and aqni then at last a layer of rice.
  • Now keep it on high flame for 1 min and then on low flame for 10- 15 mins.
  • Put off the stove.
  • Veg Biryani is ready, mix well while serving.
