Dahi Ki Kadi


Ingredients:

1.     Basen- 50 gm
2.     Water- 1 ltr
3.     Curd- 400 gm
4.     Red chilli powder- ½ tsp
5.     Green chilies- 15
6.     Dry red chillies- 5
7.     Salt- 1 ½ tsp
8.     Garlic & ginger paste- 1 tsp
9.     Onion-1 (cut vertically)
10.   Coriander-2
11.    Curry leaves- few
12.   Rai- ½ tsp
13.   Kalonji- ¼ tsp
14.  Dhanya zeera powder- 1 tsp
15.   Zeera- ½ tsp

Ingredients Of Bhajiya:

1.     Basen-200 gm
2.     Red chilli powder- 1 tsp
3.     Garlic & ginger paste- 1 tsp
4.     Turmeric powder- ¼ tsp
5.     Dhanya zeera powder- 1 tsp
6.     Salt- 1 tsp
7.     Soda – ¼ tsp

Method:
·        In a bowl take basen (200 gm) . To this add red chilli powder, salt, garlic ginger paste, dhanya zeera, turmeric powder and soda mix this with water. See to it that no lumps are formed. It should neither be hard nor like liquid. keep this aside.
·        In a vessel take basen (50 gm) add curd, red chilli, salt, garlic ginger , turmeric powder, dhanya zeera powder, and water(1 ½ ltr) and mix this together. See to it that no lumps are formed. Pass this mixture through mesh. The material left in mesh is thrown. To the juice add onion, green chillies, coriander and curry leaves. keep it on stove and let this  boil for 10 mins. This is called kadhi.
·        The mixture of basen kept aside is to be fried in small quantities to make bhajiya. Drain the excess oil from the bhajiya and put in kadhi.
·        In a pan take 50 gm oil and fry zeera, then rai, kalonji , dry red chillies. Put off the stove. After 2 mins add this oil to kadhi.
