Ingredients:

Brinjal- 500 gm
2.
Salt- 1 tsp
3.
Onion- 1
4.
Curry leaves- few
5.
Garlic ginger paste- ½ tsp
6.
Coriander-2
7.
Oil- 100 gm
8.
Rai- ¼ tsp
9.
Green chillies- 8
10. Turmeric powder- ¼ tsp
Method:
- Cut brinjal into 4 pieces.
- In a vessel take oil and add brinjal and salt (1/2) and fry until brinjal turns light brown. Now take the brinjal off the vessel. To the same oil add rai and fry then add green chillies, onion and curry leaves and fry till onion turns soft then add garlic ginger paste salt (1/2 tsp) and turmeric powder and fry. Then add coriander and fry, then add the fried brinjals to it, fry for 5 mins to mix everything by keeping medium flame.
- Baigan ka bharta is ready.
- It tastes good with chapatti.
